The Royal Welsh Winter Fair will open next week - and this year’s honours will fall to a well-known father-and-son team from one of Wales’s best-loved butchery businesses.

Ieuan and Sion Edwards, of Edwards of Conwy, will officially open the 2025 Winter Fair at the Llanelwedd showground at 10am on Monday (November 24). The ceremony will be held in Exhibition Hall 1 in the Main Ring.

The two-day event is one of the highlights of the agricultural calendar, attracting visitors, exhibitors and prize-winning livestock from across Wales and beyond.

Ieuan Edwards first opened his butcher’s shop on Conwy High Street in 1983, building a reputation for traditional skills, local sourcing and high-quality produce. More than 40 years on, Edwards of Conwy has grown from a single shop into a national brand, with its “The Welsh Butcher” sausages, pies and cured meats now stocked by leading supermarkets across the UK.

The business continues to evolve, developing new products while maintaining the traditions and standards that have shaped its reputation over four decades.

Following the official opening, a series of industry awards will be presented, including the 2025 John Gittins Memorial Award, the 2026 Nuffield Scholarship, the Oxford Farming Conference Bursary 2026 and the inaugural Dai Jones Llanilar Memorial Award.
